Veggie Zabayon ice cream fondant made with Nuts About Chocolate, sprouted seeds and BUTTER NUTS SQUASH, FRESH SPINACH AND BROCCOLI

There is something that never goes out of your mind… The flavor of your childhood. We have an expression in French which evokes ” les Madeleines de Proust”. As you probably know already, my mom is from Tunisia. Being born in France, I was also exposed to the most amazing deserts.

Loaded with eggs, sugar, butter, cream…

I still want them but no sugar for me any more. I gave up eating it 5 years ago and never came back. What for???

So I attempted to recreate it with healthier organic ingredients. Did it work??? YES better than expected I would even say better than the Sabayon that I used to devour. This is the recipe :

  • 1 butter nut squash roasted
  • 1 cup of steamed broccoli
  • 1 cup of fresh spinach
  • Half a cup of raw coconut cream
  • Half a cup of Tahini from unhulled sesame seeds (Sprouted is best)
  • 1/3 cup of sprouted dehydrated raw pistachios (optional)
  • 1/3 cup of organic extra virgin coconut oil
  • 1 tablespoon of orange blossom flower
  • 3 medjool dates

You will need to insert all the ingredients but the pistachios into the blender. Once done insert into your mold and leave into the freezer for 4 hours. You can also insert it into small cups rather than using a big mold. Add the pistachios inside.

You can decorate your Sabayon the way you wish.

Yesterday while preparing my food for Friday night and for the week end, I promised my kids that I would would make a chocolate fondant. 

As you know being a mom and while working, it is not always easy to make everything from scratch.

I literally had five minutes in between meal prep and business meetings all day to make this Organic Nourishing Double Ganache Raw Dark Chocolate Fondant.

Nutrients dense food keeps you happy and thriving.

As you probably all know already I love good food. The fact is that I love to eat. My only concern is that I don’t want to be overweight.

As a teenage I happened to develop eating disorders. Today, I know in my guts that this eating disorder was developed by the fact that my food was empty of good nutrients and my growing body was unable to function at its best.

With all the research that I have been doing about nutrient dense plant food and raw cacao … I know that I am doing the right thing. The fact is that I am almost never hungry, I feel satisfied and every bite coming into my mouth is real delicious decadent and nourishing…!

So when craving for sweets I am going to Hnina and Nuts About Chocolate. Those are just loaded with real food which is not really the sweetest but give you the fix you need.

Vegetable dark chocolate fondant is only made with plant based nutrients

Vegetable dark chocolate fondant had to be made this week. Like every day I am craving for my dark chocolate dosage but wanted to get the required nutrients you need at breakfast.

So I started to strategize and see what I could use to make it so creamy. My challenge is that I did not want to add dates or any added sweetener.

I have been using butternut squash considerably lately and truly love it.
